Zucchini with Coconut Oil

What oil do you use for cooking? Most of us use sunflower, canola, olive, etc and we don’t realize that all the good properties of those oils disappear with high heat, these oils are heavy on digestion. Without certain enzymes, they get stored in our body as fat.

Meanwhile coconut oil is one of the healthiest foods on earth. You could easily incorporate it into your daily diet. Add it to your morning smoothie, use it as a spread, use it anywhere to replace butter, bake with it and cook with it!

Here is a simple easy recipe to start trying out coconut oil.

Cut zucchini into thin slices and sauté them in coconut oil. Add some sea salt and pepper to taste.

Zucchini is a good source of protein, vit A, vit C, omega-3 essential oil, folate, potassium, phosphorus, magnesium, and others.

Beet Salad

Are you tired of the same green leafy salad every day? Then this is a recipe for you. The beets are amazing detoxifying meal and it’s packed with folate, manganese, fiber, potassium, vitamin C, tryptophan, magnesium, etc.

Ingredients:
3 medium size beets
2 tb sp vegenaise or mayonnaise
½ cup pecan halves
½ cup dry prunes
1 glove of garlic or more to taste
Salt to taste

Preparation:
Wash the beets but don’t peal the skin off. Put in a pot with water to cook or steam for about 1 hr or less. Don’t overcook to preserve the nutrients. They are ready when the knife goes in easily.
Put garlic, prunes, salt, and pecans in a food processor. Mix.
Peal the skin from the beets and shred them. Combine everything into one bowl and add vegenaise.

Enjoy and let me know if you like it! It is a special salad for all the Russians and I don’t remember one holiday in my childhood when we didn’t have it on the table. I remember, adults used to pack it up with garlic!
